Baked apples with dates and figs

Vegan dessert for cosy winter evenings

Method

1. Wash the apples, cut off the tops and set aside for later, and use an apple corer to scoop out the pips.
Place the apples in a baking dish.

2. Squeeze the lemon juice and grate the zest.

3. Chop up the NATURATA macadamia nuts and toast in a frying pan without oil until golden. Leave on a plate to cool.

4. Cut the NATURATA dried fruit into small pieces and combine with the macadamia nuts, the NATURATA cane sugar and the Naturatit coconut oil. Fill the hollowed-out apples with the mixture.

5. Bring the pineapple juice, orange juice and sugar to simmering point briefly and pour this mixture over the apples. Bake the apples in a preheated oven at 200°C (180°C for fan-assisted ovens) for 35 minutes. After 25 minutes put the tops back on the apples and cook for the remaining time.
