Croque Briard with Brie de Meaux AOP

A modern interpretation of "the king of cheese"
Method
1. Remove the cheese rind and crush the cheese with a fork. Mix it with the butter in a bowl.
2. Season the mixture with salt and freshly ground pepper.
3. Divide the cheese mixture between two slices of toast.
4. Bake the Croque Briard in a sandwich toaster or in a very hot oven for 5 minutes until golden brown.
5. Serve immediately - with a salad and a glass of Champagne.
