Green asparagus with potatoes and tomatoes
- Cook the unpeeled potatoes for approx. 10 min. in salted water, then cut them in half.
- Remove any woody ends from the asparagus, then cut them into quarters lengthwise, halve the tomatoes and chop the garlic.
- Heat the olive oil in a pan and fry the potatoes in it for 5 minutes, then remove.
- Add the asparagus and garlic to the pan and fry for 5 - 10 minutes, depending on the desired doneness. Deglaze with balsamic vinegar.
- Fold in the potatoes and tomatoes and season everything with salt and pepper.
- Sprinkle with Parmesan cheese and serve.
