Green asparagus with potatoes and tomatoes

  1. Cook the unpeeled potatoes for approx. 10 min. in salted water, then cut them in half.
  2. Remove any woody ends from the asparagus, then cut them into quarters lengthwise, halve the tomatoes and chop the garlic.
  3. Heat the olive oil in a pan and fry the potatoes in it for 5 minutes, then remove.
  4. Add the asparagus and garlic to the pan and fry for 5 - 10 minutes, depending on the desired doneness. Deglaze with balsamic vinegar.
  5. Fold in the potatoes and tomatoes and season everything with salt and pepper.
  6. Sprinkle with Parmesan cheese and serve.
