Mediterranean salad with grilled courgettes

  1. Wash the courgettes and cut them into 0.5-1 cm thick slices.
  2. In a grill pan heat some BIOG olive frying oil to medium heat and fry the courgette slices for 2 minutes on each side until they have a nice grill pattern. Leave the grilled courgette slices to cool slightly and in the meantime prepare the dressing.
  3. For the dressing, mix all the ingredients in a small bowl or shaker, and season to taste.
  4. Place the grilled courgette slices in a large bowl. Drain the BIOG chickpeas, slice the BIOG Kalamata olives and finely chop the herbs. Add everything to the courgettes. Crumble the marinated BIOG feta over the courgettes and add the dressing. Mix everything well and season with salt and black pepper to taste.
