Dumplings with BIOG Stoffi - Kniddelen

For the dumplings, mix the eggs, salt and curd. Gradually add the flour until a thick dough forms. Then leave to rest for half an hour.
Bring water to the boil in a saucepan. Using two spoons, scoop out portions of the dough and place them in the boiling water. Do not put too much dough into the pot at once so that the dumplings are ready at the same time. This is the case after 4-5 minutes. Test: take out a thicker dumpling and divide it, it should be firm in the middle.
Remove the dumplings from the water, put them in a bowl and keep warm or serve them straight away with applesauce on a plate:
Depending on your preference, the dumplings can also be served with bacon, toast or cream:
- Roast the bacon in a pan and add to the dumplings.
- Toast bread cubes in a pan with butter and sprinkle over the dumplings.
- Add the cream to the pan and bring to the boil. Season with salt and pepper, then pour over the finished dumplings.
You can also add everything, i.e. applesauce, bacon, bread cubes and cream.
